Happiness Is a Gift By Alain
Above all, and this seems quite apparent to me, it is impossible to be happy if one does not have the desire to be happy; one must therefore, will one’s happiness, and create it.
What has not been sufficiently stressed is that we have an obligation toward others to be happy. It is often said that only the happy are loved; but it is forgotten that this recompense is just and deserved; for unhappiness, boredom, and despair are in the air we all breath; and so we owe thanks and a laurel wreath to those who dissipate the miasmas and, in a sense, purify life around us with their energetic example.
There is indeed nothing more profound in love than the vow to be happy.
What can be more difficult to overcome than the boredom, sadness, or unhappiness of those we love?
Every man and every woman should keep in mind the fact that happiness -I mean the happiness one conquers for oneself- is the most beautiful and the most generous gift one can give.

Ingredients for the white chocolate layer :
1 1/2 cups ………………..heavy cream ( Used the brand Rich Cream)
3 tbsp………………..white chocolate ( grated )
3 tsp…………………agar agar
3 tsbp………………cold water.
1/2 tsp…………….chocolate essence
Take two vessels one small and one little bigger than the first one.
Now boil water in the smaller one .
In a bigger thick bottom vessel add the cream ย and white chocolate .
When the water in smaller vessel boils keep the bigger one on top of the smaller vessel.
Stir the mixture in the upper vessel continuously till the chocolates completely melts.
This is called double boiled method.
Do not heat the cream and chocolate directly or else the cream will start leaving fats.
Remove from the heat and add chocolate essence and agar agar water and mix very well.
Cool and keep aside for further use.
Keep it aside for further use.
Assembling :ย
Keep the glasses in freezer for 1/2 an hour for quick cooling.
When the coffee layer is firm to touch add the white chocolate layer.
Again set it in fridge or freezer depending on how quick you want it to set.
Check for the firmness of white layer.
In fridge it will take 4 to 5 hours to set and in freezer about 1 to 1 n 1/2 hours to set.
Now top with the remaining coffee layer and again freeze till the top is firm
Serve chilled garnished with white chocolate scrapings.

Irish Coffee
This is one of my Favorites!ย When its cold out and I want to share good cheer with friends. I went out and online and got its history and recipe so you could enjoy it too.
On a recent trip to Ireland, after a visit to the Foynes Flying boat museum our tour guide with the willing help of my brother-in-law demonstrated how to make a true Irish Coffee. I find Irish Coffee to be absolutely delicious, given my undying love for two wonderful things: coffee and whiskey!
There, you learned something sordid and interesting about me. The reason for this love? Whiskey warms your spirit (no pun intended) and your body too. And coffee? Well, whatโs not to love?
Until recently I had no idea where Irish Coffee originated or how it came to be. Was it just a made up name? Restaurants are notorious for making up names to make dishes/beverages sound better than what they really are! The story about Irish coffee, however, is far from made up. It is truly romantic and fascinating to boot. So, at the request of a good friend, I am sharing with you the true origins of Irish Coffee and of course, the recipe too!
Irish Coffee was born in Foynes, Ireland, a small village in Co. Limerick on the Shannon River. Foynes is closely linked to the era of transatlantic aviation in the 30โs and 40โs. Early transatlantic planes did not possess the flying range to make it across the Atlantic in one shot. Foynes happened to be the last port of call before crossing the pond. ย If the weather was bad, the planes could not fly or would have to return to Foynes until the weather conditionsย improved. The base at Foynes had a small restaurant that catered to patrons of air travel. Our guide told us that on a certain day in 1942 when the weather was exceptionally bad, a group of weary passengers, pilot, and crew, were forced to return to Foynes to await better flying conditions. Chef Joseph Sheridan who was on duty that day felt sorry for these weary travelers. At the request of his boss, he came up with a drink to warm up the passengers and crew.
Sheridan mixed coffee, Powers Irish whiskey, raw sugar and topped it with whipped cream (the real stuff of course). Passengers were delighted with the beverage. One of them asked: โIs this Brazilian coffee?โ Sheridan replied: โNo, itโs Irish Coffee.โ And thus it began. I told you it was a great story! Unfortunately, I have not been able to find Powers Irish whiskey in the US, major bummer, but Jamesonโs works quite well.
The Irish coffee we enjoyed at Foynes is without a doubt the best Irish Coffee I have ever had. Living in the frigid Northeastern U.S. I can tell you for sure that I will be enjoying my fair share of this drink in the winter months to come. Slainte!

Irish Coffee
Here are the authentic recipe and story of how Irish coffee came to be back in the early days of Trans-Atlantic flight from Foynes Ireland.
Ingredients
- 1ย cupย coffeeย strong, black
- 1ย tspย sugarย raw is best
- 1.5ย ozย whiskeyย Irish
- 1/4ย cupย whipped creamย Use real whipped cream
Instructions

For this recipe, you should use a glass ( a wine glass works well).

Heat the glass by pouring boiling water into it and allow it to sit for a minute or so. Dump out the water.

Place raw sugar in the glass and add the coffee and stir.

Add the whiskey and stir.

Top with whipped cream.

The Essence of a Friend…
We have many, many, many, acquaintancesย in thisย life, But Few real friends.
When you think about it you want to be sad, Don’t this is how its supposedย to be. I was trying to teach my teen daughter it is possible to have more than one best friend. where she argued a blue streak saying it just was not possible. I have learned otherwise there are different kinds ofย friends.
- The friendly acquaintance.
- ย ย ย ย Your casual friend( you know the one from high school you call every 6 mo to a year just to make sure their breathing, go camping or watch the super bowl with, or Ladies you go shopping twice a year.)
- ย ย ย ย Then there are your close friends,( You know the ones you hang with at the bar or coffee shop. once or twice a week.)
- ย ย ย ย Best friend type A:(the one you take to the gym, see every other day but still no call’s after 11pm. and youย share your every day strugglesย to a point)
- ย ย ย BEST Friend best of the best.(the ones you call family even though you’re not related. Brothers from differentย mothers and sisters of the same.You shareย everything day or night ups, downs there is never TMI.)
For me, I love all unconditionally, and sometimes its hard to distinguish between 1&2.
but it happens and I get hurt. In explaining this to my daughter she started to get it.
Sometimes when I think of the people I consider family, some I have known for years and some only months and some I even never seen or I have butย not in person all I do is talk to them on messenger or skype. but they are goodย people. you know how kids today say I have an app for that? well, I say I have a Friend for that.ย I have friends that share in most all of my interests and I have friends that share life experiences, so when I need my friends I go to the ones that can help the most first and then the rest. to start a spiral just![]()

- Always be Honest (Don’t Lie to your Friends)
- learn when to pleadย the fifth, ( to say I have no opinion)
- Always Listen, evenย when you think they’re totallyย out of their mind.
- ย Never Ever Take Yourย Friends For Granted!!!
- always have words of encouragement ready when needed.
- Don’t be afraid to tell yourย friends they are Messingย up.
- If you can, give yourย friend the tools to get back on track.This is when I teach. If they have needs that need to be met, use your best judgmentย and refer to rule 11.(as a rule, Iย always buy what they need if it concerns money if I have it. I never give Cash or checks to friends No offense.)
- Never leave an argument unsettled( if you cant agree, agree to disagree)
- ย Always let your friends know how you feel.
- always let them know they are loved.(give hugs when needed)
- The word NO is notย the end of a friendship.
- FORGIVENESS is not a weakness…
- All Apologies are from the heart and it is not a weakness to do so if you royally screwedย up, is a sign of the strength of your character.
